Ingredients:
- Dry and salted cod, 400 gr.
- 3 eggs
- 2 cloves of garlic
- Potato, 250 gr.
- ½ Olive oil cup.
- A spoonful of chopped parsley.
Preparation:
Leave the cod to soak for 12 hours approximately, changing the water 3 times. Cook the cod in a saucepan with a little of water: when it starts to boil, remove it from the heat and allow it to cool. Cook the potatoes till they become tender and drain them. Cook two eggs for 10-12 minutes, refresh them and peel them. Puree the peeled potatoes. Add the cod, free of bones and skin and chopped or crumbled just as the parsley and the eggs.
Mash the cloves of garlic and put them in a bowl, add the yolk of the remaining egg, beating it with a wooden spoon, adding the potato puree. Add the olive oil little by little while beating. Finally, add the cod and the chopped eggs. Serve with toasted bread.
