Ingredients (for four people)
- ½ kg. of cod
- ¾ kg. of potatoes
- 3 eggs
- Pine nuts.
- Parsley and garlic
Preparation
The cod is cut into pieces, is washed and drained and then is boiled with unpeeled potatoes. Once it is boiled, the potatoes have to be peeled and the skin and bones of the cod have to be removed. Then it has to be crumbled and kneaded together with the potatoes, the yolks of the eggs and one of the egg whites. Some cloves of garlic and the parsley are finely chopped. The pine nuts are turned over in a pan with hot oil and once golden brown; they have to be added to the dough, together with the garlic and the parsley. When the dough is compact, the balls can be formed, round or elongated, according to taste. They are coated in flour and fried with very hot oil till they will become golden.
