CHEF NANDO’S GREAT RECIPES
Watery rice with duck and mushrooms
Ingredientes:
- ½ Kg. duck
- 100 grs. Flat green beans (“reddish” if it is possible)
- 200 grs varied wild mushrooms
- 100 grs. White mushrooms
- ½ onion
- ½ carrot
- 2 spoonful of diced tomato
- A bit of saffron
- Sweet paprika poder
- A bit of wine
Preparation
We fry the duck, with salt and pepper, for 1o minutes in order it begins to be brown together with broken fresh garlic. We separate the duck and remove the garlic. We fry the onion and the chopped carrot with the same oil. Then we add the green beans and, some minutes later, the chopped mushrooms. Once everything is well fried we add the sweet paprika powder, the diced tomato (tomato sauce) and after stirring for a while we add half a glass of red wine and lower the heat. Now is the time to add the duck and let simmer for 30 minutes. After this we add the rest of the mushrooms, the saffron, and let simmer once again for 10 minutes. Correct salt and add the rice, which must boil at medium-high heat for 15 minutes. Leave to sit for 2 or 3 minutes and it will be ready to serve!!
