CHEF NANDO’S GREAT RECIPES 

Seafood rice 

Ingredients

  • 1/2 kg. rice
  • 1 kg. de mussels
  • 300 gr. de lobsters
  • 300 gr. de prawns
  • 300 gr. de clams
  • 300 gr. de crabs/trash fish
  • 1 medium-size squid y 1 cuttlefish
  • 4 cloves of garlic and parsley
  • a few strands of saffron
  • 1 small glass of olive oil
  • Water
  • Salt

 

Preparation

 First we peel the prawns and the lobsters and we keep them. Then we put in a saucepan the shells together with the trash fish and cook it for 45 minutes approximately. We cook the mussels in another saucepan till they open naturally and then we keep them as well. We put the clams in the mussel broth in order to make them open the same way as the mussels. Then we strain the water and we add them to the saucepan where the shells and the trash fish are.

 Now we spill a bit of oil in a saucepan, while we dice the garlic and the parsley, we put it together with the squid and the cuttlefish that we will chop in pieces. We fry everything lightly. Then we put the strands of saffron and we add diced tomato and the rice, measuring with cups. Hereafter we put the paprika and 3 cups of hot seafood broth for each rice cup.

 We add some salt and leave to cook over a strong heat at the beginning and, after some minutes turn it down to a medium heat. After 15 minutes approximately we will add the prawns, lobsters and crabs, and leave on a low heat for 2 more minutes.

 Now we turn off the heat and leave to sit for a few minutes.
