Orange sponge cake

Ingredients

 

  • 2 oranges
  • 4 eggs
  • 125 gr. ground almond
  • 150 gr. sugar

 

 

Preparation

Beat the egg yolks with the sugar till you get a smooth cream. Add the grated rind of the two oranges and the ground almond and when everything has been very well beaten, the 4 egg whites already beaten until stiff must be added. Put a mould covered with butter and a bit of flour so it does not stick. Put it in the oven, previously warmed, to 180 degrees from below, for 30-45 minutes. If it is slightly burned, protect it with aluminium foil. When the sponge cake cools, cover it with the orange juice from the two oranges. Pass the orange juice through a fine sieve. The sponge cake can be made the day before.
