Filled squids
Ingredients
- Whole squids
- 1 onion
- 1 clove of garlic
- 4 spoonfuls of olive oil
- 1 spring of parsley
- 1 spoonful of homemade tomato
- A Little dash of sherry or brandy
- Ground pork meat
- Fish stock
Preparation
First of all, the squids must be cleaned according to the Chef Nando’s classic rules. The fins and legs must be chopped. Fry the onion and the clove of garlic until golden with 4 spoonfuls of oil. When the onion is tender, add a bit of chopped parsley, tomato and a little dash of sherry/brandy.
Fry a bit of ground pork meat, with the fins and legs of the squid, parsley, chopped garlic, and fill the squids and nail their slits with a toothpick. They are placed whole with fried onion and a bit of vegetable broth.
Leave to cook for 10 minutes approximately. If it is too liquid, then we add breadcrumbs or flour in order to make the sauce thicker. Serve hot.
